Seen on More GDO: Gingered Plum Smoothie

I’m the healthy living expert on Fox-12 Oregon’s More Good Day Oregon show, and I recently demo’d this Gingered Plum Smoothie during one of my weekly segments.

I love plums so much, but their season is too short! That’s why I buy extra when they’re in season, and freeze them for this amazing and smoothie.

The Gingered Plum Smoothie is absolutely gorgeous, and it’s one of my all-time most popular recipes. It was once featured on Buzzfeed, and now I’ve simplified the recipe because, well — I’m more of a minimalist than I was a couple of years ago.

Even though the new Gingered Plum Smoothie now includes fewer ingredients, it’s still as delicious as ever.

This smoothie is creamy and lush from coconut milk, with a bit of tang from fresh ginger. Enjoy!

Serves 2.

Ingredients

  • 1 1/2 cups canned coconut milk (full fat or light)
  • 1/2 cup of filtered water
  • 1 cup frozen plums (pit plums and slice into quarters; freeze in a single layer)
  • 1/2 cup of frozen beets
  • 1-2 teaspoons grated ginger
  • 2 tablespoons chia seed
  • OPTIONAL: 1/2 teaspoon vanilla extract
  • OPTIONAL: one serving of your favorite protein powder
  • OPTIONAL: for sweetness... 1-2 medjool dates (pitted), or 1/2 banana, frozen
  • OPTIONAL: 1/2 cup of ice, for extra frostiness

Directions

  • Step 1

    Place ingredients into high-speed blender, adding frozen fruit and ice last.

  • Step 2

    Process until creamy and smooth. Add water a quarter-cup at a time if you want a thinner consistency.

  • Step 3

    Serve immediately or store some in fridge for later.
