Blueberry Beet Smoothie

I have loved juicing and smoothie-ing beets for a long time, but I’ll admit — they can kind of be a hassle to deal with.

So I was thrilled to discover you can often find them in the frozen section.

This helps since I don’t always have fresh beets on hand — or, I don’t feel like making the extra effort of scrubbing and peeling, etc. 

Beets are a great power food to add to your regular diet. They’re rich in antioxidants and are super detoxifying. In addition, research shows they can help reduce blood pressure. Here’s another cool fact: beets can enhance the delivery of oxygenated blood to our muscles, which has been shown to improve athletic performance. 

Plus beets are pretty in a smoothie, making this one a lovely shade of purple. 

Serves 2-3.

Ingredients

  • 1 cup of organic, unsweetened coconut milk (in the can or box — both work)
  • 1 1/2 cups of filtered water
  • 1 romaine heart, chopped
  • 1 big handful of spinach
  • 2 tablespoons ground flax seed
  • 2 tablespoons chia seed
  • 1 small orange, peeled and chopped
  • 1 cup frozen, sliced beets (or raw, peeled and chopped)
  • 2 cups frozen blueberries
  • OPTIONAL — 1 teaspoon fresh ginger, grated
  • OPTIONAL — a squeeze of fresh lemon juice
  • OPTIONAL — 1/2 banana, frozen or 1 medjool date (for sweetness)
  • OPTIONAL — 1/2 cup of ice, for frosty texture

Directions

  • Step 1

    Place ingredients into high-speed blender, adding frozen fruit and ice last.

  • Step 2

    Process until creamy and smooth. Add water a quarter-cup at a time if you want a thinner consistency.

  • Step 3

    Serve immediately or store some in fridge for later. Salud!
