Mason Jar Cup of Noodles

You may have seen this clever mason jar/noodle cup idea shared on Facebook or Pinterest — it’s a brilliant, healthy spin on those instant ramen cups I lived on in my early 20s.

Here’s what I love about this idea: you can make several at a time, and then keep them in the refrigerator for quick grab-and-go lunches for work, or an easy just-add-water dinner at home on busy weeknights.

Feel free to customize your jar to include leftover protein or vegetables. Once you get the idea, you can easily adapt the ingredients to reflect different flavors and cuisines.

Ingredients

  • 2 teaspoons miso paste
  • 1 teaspoon vegetarian bouillon (i.e. Better Than Bouillon “No Chicken” Base)
  • 1 teaspoon tamari
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon curry paste or sriracha (if you like spicy)
  • ½ cup of cooked (shelled) edamame
  • 1 serving cooked rice ramen noodles (i.e. Lotus Foods)
  • A couple handfuls of baby spinach
  • ¼ cup thinly sliced mushrooms
  • ¼ thinly sliced scallions
  • a few sprigs of cilantro
  • Boiling water

Directions

  • Step 1

    Cook the edamame and ramen noodles according to package instructions. Set aside.

  • Step 2

    Now, you’re ready to build your cup of noodles. Add the miso paste, bouillon, tamari, sesame oil, and curry paste to the bottom of a heat-resistant quart sized mason jar.

    Next, add your noodles and edamame.

    Next, layer on the spinach and mushrooms. Keep the scallions and cilantro in a separate container or sandwich bag.

    Screw on a lid, and refrigerate the jar and fresh herbs until ready to eat.

    About a half hour before you want to eat, remove the jar from the refrigerator and let it come up to room temperature. Here's why: if you pour boiling water into a cold jar, the glass may crack.

    Five minutes before you want to eat, boil water in a kettle. Let the water cool for a few minutes, and then add hot water to the jar to about ¾ full, leaving some room at the top.

    Give things a stir and put the lid back on loosely. Let steep for five minutes.
